Abi and Duane Lunde started Oh Kimchi less than a year ago, and already they’ve established quite a following in the capital city. They recently started traveling the interstate south to San Antonio to test the local market to see whether San Antonio residents have a taste for the traditional fermented Korean dish.
Turns out there may be quite a market here for kimchi.
At the mid-January Sunday Quarry Farmers & Ranchers market, Oh Kimchi sold out with more than an hour to spare. “We have been around (San Antonio) for only four months and can’t believe the response our product has received,” says Duane Lunde. “My wife and I can’t wait to be back next Sunday and all that follow!”
Kimchi packs quite a healthful punch. It is loaded with Vitamins A, B and C and it contains healthy bacteria found in fermented foods like yogurt. The bacteria help with digestion and overall gastrointestional health. Kimchi is made with vegetables and a mix of seasonings.
