When Rochelle Fulton lost her beloved sister and catering business partner to cancer a year ago, she struggled with how to move forward. “I watched my sister work so hard to heal her body, largely through food, and that made an impression on me,” she says. She soon resolved to focus on nutrition and healthy food and to devote her life to improving the health of others.
Months later, Fulton is back in business on the city’s northeast side as D.R. Healthy Meals. Her exclusive focus is healthy food that she hopes will give busy families a healthy option to fast-food fare. All D.R. meals are under 700 calories and made fresh daily, and Fulton proudly participates in San Antonio’s Por Vida! Program, which stipulate that a meal cannot contain fried foods or exceed 700 calories, 23 grams of fat, 8 grams of saturated fat, 0.5 grams of trans fat and 750 milligrams of sodium.
Fulton’s storefront and commercial kitchen currently does not offer dine-in service, but she offers take-out, delivery and catering services. The D.R. Health Meals menu is a smorgasbord of international options that includes Asian, Italian, Mexican and even Cajun options, providing plenty of proof that food options can be plentiful AND healthy. Fulton makes sure her fruits and vegetables are sustainably farmed and that her offerings are free of hormones, antibiotics, fillers and preservatives.
